Unlike other teas, matcha is made by grinding the tea leaf itself into powder and taking it directly into your body.
In other words, it's the equivalent of eating the whole leaf.
Matcha is now regarded as a superfood, but it has no value at all if it isn't safe.

KATSUHIKO matcha is carefully selected by long-established tea masters — including the 20th-generation head of a Uji matcha wholesaler in Kyoto founded in the Edo period (1751) and venerable tea houses founded in 1818 — who carry forward Kyoto's history, tradition, and culture.
By blocking sunlight through shade cultivation, the tea leaves retain abundant theanine, resulting in a smooth tea with little astringency and a concentrated, rich umami and sweetness. Because photosynthesis is suppressed, the leaves also produce more chlorophyll, giving matcha and gyokuro their vivid, deep green color.
Tea leaves carefully raised in historic tea gardens are slowly ground on dedicated stone mills, drawing out matcha's rich aroma and smooth umami to the fullest. Our relentless pursuit of the "genuine article," backed by techniques passed down through generations, delivers a flavor found nowhere else.
